Red cabbage is one of the most underutilized vegetables in salads, yet its vibrant blue-violet color is gorgeous and it’s so rich in antioxidants that it’s one of the most healthful vegetables around. This cool Mediterranean slaw in a sesame paste dressing makes a perfect antidote to those hot summer days.

Method

  1. Combine the cabbage, carrots, and green and yellow bell peppers in a bowl.
  2. Stir together the tahini, water, parsley, lemon juice, garlic, salt, and pepper in a small bowl, and whisk until combined well.
  3. Toss the cabbage salad with the dressing and let stand for at least 15 minutes before serving so that the cabbage can absorb the other flavors.
