This soft, fruity rice, with its lovely, aroma and flavor, is a modern adaptation of traditional Bukharian Sabbath rice that was served in my parents’ home nearly every Saturday lunch. Since cooking is not permitted on the Sabbath, the rice was cooked in a linen bag (called a khalti) immersed in a soup stock and cooked slowly overnight.
