The replacement of couscous with quinoa does not alter the aromas and flavors of this Moroccan favorite. It’s a wonderful variation on the classic, adorned with a medley of colorful dried fruits and nuts.

Ingredients

  • 1 cup (225 g) dried quinoa
  • 3 strands saffron
  • 4

Method

  1. Cook the quinoa according to the package instructions; however, add the saffron to the water.
  2. Combine the apricots, raisins, sultanas, cranberries, pistachios, green onions, coriander leaves, and mint in a medium-size bowl.
  3. Spoon the cooked quinoa into the dried fruit mixture, season with salt and add the oil and stir to combine. Serve immediately.
