The parsnip is a root vegetable that is a relative of the carrot; although it is much paler, they do resemble each other. Typically, parsnips form a base in soup, but they can also be roasted for a richer flavor. For this dish, they’re caramelized in a maple syrup-mustard mixture and roasted until they take on a deliciously sticky texture, which makes them totally “moreish.” You won’t be able to resist them.
