Native to north Africa, okra was propagated in india in the thirteenth century. Since then, it been a staple in indian cuisine. This dish is a simple stir-fry of okra with curry spices. Okra can be slimy; to eliminate this, first wash it, pat it dry, and then air-dry it for about 30 minutes.

  • 1 lb (500 g) okra
  • 2 tablespoons oil

Method

  1. Wash the okra, pat it dry and allow it to air-dry for 30 minutes.
  2. When you are ready to start cooking, heat the oil in a saucepan set over medium-high heat. Add the onion and sauté, stirring, for 3 minutes.
  3. Stir in the chili, cumin, coriander, and turmeric. Continue sautéing for about 8 minutes, or until the onions are translucent and fragrant.
