With the exception of the slices of garlic, our vegetable assortment here is pretty much classic (and really quite terrific), but almost any combination you can imagine will work well. In place of orzo. You can use pastina or other “soup” pasta.

  1. Put the stock in a large saucepan and turn the heat to medium-high. Add the vegetables, garlic, and salt and pepper to taste. Cook at a slow boil, stirring occasionally, until the vegetables are beginning to become tender, about 10 minutes. Season to taste.
