As you can see from the ingredients list, this is a bit of work, but the payoff is very filling, big-flavored, rather magnificent crepes.

Note the inclusion of cilantro root: often you can buy cilantro with the roots attached. After washing well, these are perfectly edible—and powerfully flavored.
