An unusual preparation, in which the tart is cooked in advance and the topping barely warmed. You can vary the garnish by substituting diced or julienned carrot and daikon tossed with a mixture of a tablespoon each of soy sauce and lemon juice for the cheese mixture.

Shiso is a wonderful Japanese herb that tastes a little like basil and mint combined; you may have had it in sushi bars, but it’s only occasionally sold in supermarkets.
