This is a delicate dough, so don’t roll it too thin. It is also amazing-looking—the cooked roe is red, and the raw roe makes green polka dots.

You can get lobster roe out of female lobsters, or order it from Browne Trading (207-766-2402) or many other sources for fine seafood products. Sauce with Lobster Oil, garnished with lobster and herbs, or with a simple tomato sauce.
