Sticky rice makes a fine side dish, even without sauce, because it has much more flavor and body than most other rice. You can keep the rice hot over the steaming water for up to an hour before serving.

Ingredients

  • ½ cups sticky (or glutinous) rice, soaked in water to cover for at least 1 hour or, preferably, overnight
  • Salt and freshly ground black pepper

Method

  1. Drain the soaked rice and wrap it loosely in a piece of cheesecloth; there’s no need to tie the cheesecloth closed.
  2. Place the cheesecloth in the top of a steamer over boiling water, cover the steamer, and steam for about 8 minutes, until all traces of chalkiness are gone and the rice is fully tender. Keep the rice in the steamer until you’re ready to serve.
