Spices and nuts give this fish great crunch and flavor at once. Here, it’s best to cook the fish over not-too-high heat, because nuts burn easily. Still, the cooking time should be less than 10 minutes.

Ingredients

  • 6 hazelnuts, shelled and peeled
  • 6 almonds, shelled and peeled
  • 1 tablespoon coriander seeds

Method

  1. Combine the first 5 ingredients in a small skillet and toast over medium heat, shaking the pan occasionally, until fragrant, about 3 minutes. Grind to a coarse powder in a coffee or spice grinder.
