Real licorice comes in stick form, and it is not always easy to find—try a health food store, or an Asian market. It’s very woody, so use a heavy knife to chop it.

Rub this on cod, scallops, or other fish before roasting.

Ingredients

  • Finely grated zest of 1 lime
  • Finely grated zest of 1 orange

Method

  1. Combine all ingredients on a sheet of waxed paper and microwave at half power for 30-second intervals, pinching and crumbling between each interval until dry. Or let sit in a warm place overnight.
  2. Grind in a mortar and pestle or a spice or coffee grinder. Store, covered, for up to several months.
