Make this fast, simple vinaigrette at the last possible minute for best flavor; be sure to use sufficient salt and pepper. This is great on grilled chicken.

Ingredients

  • ½ cup fresh lemon juice
  • ½ cup extra-virgin olive oil
  • Salt and freshly ground black pepper

Method

  1. Combine the ingredients in a blender and turn on the machine. While it’s running, add 2 tablespoons hot water and blend until smooth.
  2. Taste and adjust the seasoning, then serve.
