This is the first recipe I made by myself (well, technically my sister helped). Of course, I didn’t know it was called ‘Croque madame’ back then; to my eight-year-old self it was toasted ham and cheese topped with a fried egg. I remember going to the library and taking out a children’s cookbook, seeing this recipe and being compelled to try it. My younger sister and I made it together and we felt such a sense of accomplishment.
