Method

Take some consommé and add to it a quarter of a pound of raw beef and a little chicken meat, if you have any, very finely chopped; then three tomatoes reduced to a pulp and the white of an egg. Mix well, add salt and pepper, bring to the boil, stirring well, then let it simmer for two hours. Pass through a sieve and pour it in cups. Serve cold.
