Method

Put in a dish a heaped up tablespoonful of rillettes,1 cook them for a few minutes and drain them. Add them to your prepared mixture of eggs, salt and pepper. Mix well and make your omelette. Be careful not to put too much salt, owing to the salted character of the rillettes.
