Method

Dry the sardines and sprinkle with flour; fry in very hot butter till quite brown.

The two above dishes can only be done on those parts of the coast where sardine fishing is a local industry, or in towns very near the sea. fresh sardines get very quickly spoilt by travelling, and they have to be put in salt if they are not used at once, even for a journey of an hour or so. When really fresh they are delicious.
