Method

Clean the fish, dry them, make a few cuts, season with pepper and salt, paint with oil and grill on a moderate fire. Serve with a maître d’hôtel or a beurre blanc sauce.

Grey or red mullet, brill, gurnet, herring, can be Grilled in the same way. Herring is best with a mustard sauce.
