Method

Bake in the oven some large white potatoes. When cooked peel them and pass them through a sieve; add salt and pepper, a little butter and the yolks of two eggs. Work it well over the fire so as to dry it. Let it get half cold. Then make small croquettes, about one inch thick and three inches long, roll them in flour, and either bake in the oven or fry in butter.
