Stuffed Tomatoes

Method

Cut the tomatoes in two by the middle, remove the seed and salt them. Fill them with either of the following stuffings:

  1. Chop an onion, brown it in butter, add chopped mushrooms, breadcrumbs, parsley, salt and pepper, a little consommé.
  2. Chop an onion, brown it in butter, mix with sausage meat, add salt and pepper.

Fill the tomatoes, sprinkle with breadcrumbs, put a tiny piece of butter on each and cook in a moderate oven.
