Method

Scrape the salsify, wash them in water and a little vinegar. Put in a saucepan a handful of flour, add water little by little, mixing all the time. When you have enough liquid to boil your salsifis, salt and cook on a moderate fire till soft. Dry them and brown in butter, or serve with a sauce blanche. Salsifis are also very good in fritters, in which case you prepare them as before and dip them in batter before frying.
