Method

Take a pound of haricot beans. Soak them for twelve hours. Put them in a saucepan with lots of water, salt, broken pepper, one carrot, one onion, parsley; bring to the boil, skim well and let it simmer for three hours. Drain well, leaving only a tablespoonful of the juice, add butter and serve.
