Method

Get some French beans, break the ends and boil them in boiling water with salt and pepper. Drain them well, put them in a saucepan with a good piece of butter, salt and pepper, and cook them for a few minutes on a slow fire, shaking them often.

You can also serve them with a maître d’hôtel sauce, or fry them slightly in butter. They should be in any case rather highly seasoned.
