Figs and Baked Ricotta



Place 500g fresh ricotta in a baking dish. Scatter with sea salt, pepper, thyme and rosemary, drizzle with extra virgin olive oil and bake at 200°C/Gas 6 for 15 minutes. Add 6 halved ripe figs and bake for another 10 minutes. Serve with prosciutto, drizzled with olive oil and balsamic vinegar.
