A fabulous way with fish that gives you moist, juicy, good looking fillets in 10 minutes flat. Buy the fattest, freshest fish fillets you can find.


  • 4 thick white fish fillets (eg turbot, cod, haddock, hake), around 200 g each

Place a baking tray in the oven and heat the oven to 250°C/Gas 9. The tray may buckle slightly in the heat, but carry on regardless.
