Fast Roast Fish


A fabulous way with fish that gives you moist, juicy, good looking fillets in 10 minutes flat. Buy the fattest, freshest fish fillets you can find.


  • 4 thick white fish fillets (eg turbot, cod, haddock, hake), around 200 g each
  • 2 tbsp extra virgin olive oil
  • 1 tbsp finely chopped parsley
  • sea salt
  • freshly ground pepper
  • 1 lemon


Place a baking tray in the oven and heat the oven to 250°C/Gas 9. The tray may buckle slightly in the heat, but carry on regardless.

In the meantime, gently wash the fish and pat dry. Combine the olive oil, parsley, sea salt and pepper in a bowl, and coat each fish fillet well in the mixture. Cut the lemon into 4 thick slices.

When very hot, remove the tray from the oven and place the fish on its hot surface. Add the lemon slices, return to the top shelf of the oven and bake for 10 minutes. If you could only find thin fillets, test after 5 or 6 minutes.

Gently lift each fish fillet onto a warm dinner plate. Top with a warm 4 slice of lemon, letting its juices run over the fish, and serve.
