Avery thin and pliable layer, a génoise sheet can be cut into strips to form a multilayered cake. A sheet can also be filled and rolled. This cake is endlessly adaptable. This is the foundation for Gift Box Gâteau.

Baking Preparations

Position rack in lower third of oven and preheat oven to 450 degrees.

Using a paper towel, lightly grease a small area in the center of the baking sheet with solid shortening and line the pan with foil, leaving a 2
