A very versatile frosting and filling, to which finely chopped nuts may be added.


  • 1 pound (4 sticks) unsalted butter
  • 8 egg yolks


Prepare as for Classic Buttercream, following each step, with the following difference:

After adding the butter, stir in about 1 cup of buttercream into the cooler but still liquid chocolate. Then incorporate this mixture into the larger bowl of buttercream
