Arich, creamy caramel, honeycombed with pecans and encased in a shortbread-type of pastry, is one of my favorite desserts. I tasted something like this in a bakery in Los Angeles, and since they could not share the recipe, the challenge began. After three years, my reward is this tart.

Advance Preparations

Prepare Classic Sweet Pastry. Divide it into three 8-ounce portions, and wrap and refrigerate it for at least 1 hour. Freeze one of the 8-ounce
