This pastry, made in the shape of a butterfly and spread with ground almonds, is not too rich or sweet and so is ideal to serve at brunch. It is the same as the classic Pithiviers. The inspiration for its dramatic shape came from Switzerland at the Richemont Professional School.
Prepare Classic Puff Pastry. Refrigerate it until ready to use.
Prepare Ground Almond Frangipane. Refrigerate it until firm (at least 4 hours).
