I love watercress but I know lots of people think it’s a bother to prepare. So, here’s my tip for taming that wild bunch of greenery. Slice away the thick lower stems and untie the bunch. Place the watercress in a large bowl of water and rinse it well; this will also perk up the leaves. Leave it in the water for a few minutes while you line a plastic storage container with paper towel. Put on your favourite music and then set about removing the top sprigs and any nice leaves from the bunch.
