Combine 500 g (1 lb 2 oz) mixed olives with 2 crushed garlic cloves, several thyme sprigs, 1 rosemary sprig, 1 bay leaf, some strips of lemon peel and 80 ml ( fl oz/ cup) extra virgin olive oil. Cover and leave to marinate in the refrigerator overnight.
