This is my easy go-to-salad whether I’m feeding myself or a crowd. It’s filling, has lots of punchy flavours and can easily be adjusted to any number of people and any range of ingredients. To this basic recipe, you could also add some toasted pine nuts, finely chopped preserved lemon rind, toasted flaked almonds, thinly sliced dried apricots, coarsely chopped pistachio nuts or finely chopped semi-dried tomatoes.
