Learning to make real mayonnaise is one of those things you just have to do, for two reasons. Firstly, homemade mayonnaise tastes so much better than the shop-bought version and given it only uses natural ingredients, it’s better for you as well. Secondly, only by making mayonnaise will you realise how much oil is actually in it and you will then forever show restraint. I only make this point because salads should only ever be lightly coated in mayonnaise and this coleslaw is no exception.<
