Method

Put 220 g (7¾ oz/1 cup) sugar and 250 ml (9 fl oz/1 cup) water in a small saucepan. Add 1 small stem of bruised lemongrass and bring to the boil, then reduce the heat and simmer for 5 minutes.

Stir 125 ml (4 fl oz/½ cup) passionfruit pulp into the hot syrup before removing from the heat. When cool, remove the lemongrass from the syrup, add 2 tablespoons lime juice and store in a glass jar or bottle in the refrigerator.
