With its indulgent cream cheese icing, this cake owes a lot to that perennial café favourite of the late-twentieth century, the carrot cake. However, minus the carrot it’s a bit less earnest, a little lighter in flavour and texture, and not nearly as predictable. In fact, orange and pistachio are great culinary companions and work beautifully alongside the soft richness of the cream cheese.
