The chilli paste used in this recipe can be found. Do try to make your own chilli paste at some stage and keep it in the refrigerator - it makes all manner of great dressings and sauces for meat and fish. Prepared varieties from supermarkets or Asian food stores won’t be quite as aromatic or complex in flavour, but they should still work well.
