This is really a sort of braise, as the crab cooks in its own juices as well as in the sauce. All these juices soak into the noodles, rendering them heavenly. There should be very little sauce in the pot at the end of the cooking time but if there is too much liquid, simply remove the crab and boil the sauce down until most of it has evaporated.
