A very simple omelette that goes really well with some rice and a little oyster sauce. The forerunner to the famous rockpool crab omelette, this is one of the dishes of my childhood.

Ingredients

  • 4 eggs
  • 3 tablespoons peanut oil
  • 4 green bird’s eye chillies, seeded and chopped

Method

Break the eggs into a bowl and whisk lightly. Heat the 3 tablespoons of oil in a wok until just smoking. Add the chillies, shallots, garlic and ginger and fry until fragrant, then pour into the bowl containing the eggs and stir well. Add the crab, salt, pepper, shao xing, soy, coriander and sesame o
