This is one of my two favourite vegetable dishes in Chinese cooking. The other is exactly the same except that the bean sprouts and chives are replaced by either Chinese or English spinach - both varieties are delicious, but differ slightly in taste and texture.

Yellow chives are milder in flavour than garlic chives; they are available in Asian food stores.
