This is a very simple method of making peanut sauce. You can make the curry paste yourself or you can use a manufactured paste. Homemade paste will be more aromatic, less harsh and better balanced.
Mix the red curry paste and peanut butter until blended. In a wok, heat the coconut cream and oil until the coconut cream splits (the oil separates from the solids) and the mixture becomes fragrant. Add the paste and fry until fragrant, then add the sugar and continue to cook until it caramelises. Add the fish sauce and tamarind juice and cook for 1 minute, then add the coconut milk and simmer
