This stock is the best to use in the recipes in this book. At rockpool, we don’t put anything in our chicken stock but chicken - I find the flavour to be much cleaner this way. If you want to make it rockpool-style, then use a whole chicken so you get a richer mouthfeel and a full-flavoured broth.
Take the time to make a good stock. There is nothing you can buy that is a comparable substitute. This stock will keep for about 5 days in the refrigerator, or it can be frozen for several
