Ketchup, long relegated to hamburgers and French fries, has suddenly become popular in some of the world’s most expensive restaurants. It’s easy to use as a glaze for any number of grilled foods, salmon being no exception. I liven it tip with fresh tarragon, but other fresh herbs, such as basil, marjoram, thyme, and savory, each add their own special effects to the basic glaze.
