Chili Mayonnaise

This mayonnaise is quite hot, but if you want it milder, increase the amount of bell pepper and decrease the amounts of poblanos and chipotles. Chipotle chilies, which are smoked jalapeño chilies, are available dried or canned, usually in a kind of tomato sauce called adobo sauce. Don’t feel limited to using chipotle and poblano chilies, although they are easier to find than other, more exotic chilies. The chipotle chilies add a delightful complex smoky flavor.
