Because dried wild porcini mushrooms and dried morels have a more pronounced flavor than fresh, they become highly addictive when combined with a basic mayonnaise.

Ingredients

  • 1 cup dried morel or porcini mushrooms, or a combination
  • ¾ cup basic mayonnaise

Method

Rinse the mushrooms under cold running water to eliminate dust. Put them in a bowl with ¼ cup cold water and soak for about 30 minutes, until they’re soft and pliable. Stir them around in the water every 10 minutes so they soak evenly. Squeeze them firmly in your hand—hold them over the bowl to capture
