Chicory and bacon salad is one of my standby first courses in French restaurants. The hot smoky bacon makes a savory counterpoint to the bitter greens. It’s easy to convert this classic salad into a main course or luxurious first course by adding other ingredients. Of course this applies to salmon, ideally just grilled or hot smoked, but it’s also good with cooked salmon left over from the night before.
