Since it’s virtually impossible to make authentic tandoori at home (you need a special, very hot clay oven) I can’t say this recipe is entirely authentic, but it’s close. The marinade of garlic, ginger, cumin, yogurt, and cardamom is traditional. Instead of using a clay oven, I thread thick chunks of salmon on skewers and arrange them over a bed of hot coals.
