  • 6 very ripe tomatoes
  • salt, sugar and freshly ground pepper
  • French dressing
  • 2–3 teaspoons chopped fresh mint or basil


Slice each tomato into 3 or 4 rounds or into quarters. Arrange in a single layer on a flat plate. Sprinkle with salt, sugar and several grinds of black pepper. Toss immediately in just enough French dressing to coat the tomatoes and sprinkle with chopped mint or basil. Taste for seasoning. Tomatoes must be dressed as soon as they are cut to seal in their flavour.
