Many people love cucumber raw, but few think of cooking it as a vegetable. It is quite delicious prepared in this way and particularly good with fish.
Dice the cucumber into 1cm pieces. Melt the butter in a heavy saucepan or casserole, toss in the cucumber and season with salt and freshly ground pepper. Cover and sweat over a low heat until just soft, approximately 20 minutes. Stir occasionally. Add some snipped fresh fennel. Taste and correct the seasoning if necessary. (Cucumber may be cut into dice, rounds or turned in barrel shapes
