  • 2–2½ tablespoons French dressing
  • 2–2½ tablespoons mayonnaise
  • 2–2½ tablespoons finely chopped parsley
  • 2–2½ tablespoons finely chopped chives
  • 450 g mashed or Duchesse potato
  • salt and freshly ground pepper


Add French dressing, mayonnaise, finely chopped parsley and chives to the stiff Duchesse potato. It should be of piping consistency. Taste and correct seasoning. Pipe on to individual leaves of lettuce or use to garnish a starter salad or hors d’oeuvre.
