This sweet-and-sour dressing was inspired by the traditional “sour sap,” or fermented maple sap, traditionally used to season roasting meat.

Ingredients

  • ¼ cup maple vinegar
  • cup sunflower oil
  • 2 tablespoons

Method

Put all of the ingredients into a small jar and shake vigorously. Season to taste with the salt.
